Cooking With Kendra: Plant-Based Brat Wraps With Sautéed Veggies

This super easy and simple plant-based recipe for brat wraps with sautéed veggies is a weekday staple for our family. Sometimes, we even grill the bratwursts on weekends for extra smoky flavor. You can add any veggies to the sautéed mix—it's so versatile!


Ingredients:

  • Olive oil spray

  • 5 plant-based bratwursts (or your favorite bratwurst variety)

  • 1 bell pepper, sliced

  • 1 onion, sliced

  • 5 tortillas (or hot dog buns)

  • 5 tablespoons So Delicious Unsweetened Coconut Yogurt (or any dairy-free sour cream alternative)

  • 1 small tomato, chopped

  • Hot pepper sauce (to taste)

  • Fresh cilantro, chopped (for garnish)

  • Salt and pepper (to taste)

Instructions:

  1. Cook the Brats: Heat a cast-iron pan over medium heat. Spray with olive oil to lightly coat the surface. Add the bratwursts and cook until browned and crispy on all sides, turning occasionally. Once done, remove from the pan and set aside.

  2. Prepare the Veggies: In the same pan, add the sliced bell pepper and onion. Season with salt and pepper to taste. Sauté until softened and caramelized to your desired doneness.

  3. Warm the Tortillas: While the veggies cook, warm or toast the tortillas (or hot dog buns) until pliable and slightly browned.

  4. Assemble the Wraps:

    • Lay a warm tortilla flat.

    • Add a generous spoonful of the sautéed veggies.

    • Place one crispy brat on top.

    • Add a tablespoon of coconut yogurt for a tangy, sour cream-like touch.

    • Sprinkle with chopped tomatoes and drizzle with hot pepper sauce.

    • Garnish with fresh cilantro.

  5. Enjoy! Roll up the tortilla, securing the filling, and dig in. Perfect for a quick and satisfying meal!
